Whole Roasted Chicken


Easiest dinner ever.  The trickiest thing is cutting it apart to serve.

Ingredients:
1 Chicken (no rinsing required)
Oil (coconut or organic evoo)
Salt
Garlic Powder
Oregano/Italian Seasoning/Rosemary
Veggie (cauliflower florets, brocolli florets, brussel sprouts, cubed potatoes (not leaky gut friendly), green beans, asparagus or anything else that a chicken can sit on top off)

Preheat oven to 375.  Use a casserole dish, stainless steal pan, pasta pot, or anything else that will fit a chicken in the oven and put a veggie (any stable veggie) in the bottom of the pan.  Drizzle any oil over the veggies and shake your pan so they get all covered in the oil.  Then liberally salt and coat with garlic powder.  Now place your chicken, backside up, on top of the veggie.  Liberally salt and coat with garlic powder and oregano or any Italian type herb.  Then turn the chicken over so it is breast side up and season the same way.  Put the entire thing in the oven for 1:30-2:00 hours.  Check at 1:30 to see if the juices are clear.  If not return to the oven for 20-30 more minutes.  If you want to put it in and "forget it" turn your oven down to 350 and roast for 2:00 straight.  This is very difficult to overcook so don't worry too much about the time.

Take out of the oven and leave to cool about 10-15 minutes.  Set the chicken on a big cutting board.  Using tongs and a sharp knife cut off the thighs & legs as whole sets and do the same with the wings.  Then taking care to not destroy the crispy skin cut the breast meat away from the bone.  Scoop your deliciously roasted in chicken goodnessy veggies out of the pan and serve alongside your chicken.  This is perfect over leftover quinoa, quinoa/lentil pasta or lentil mash!

Leave the remainder of the meat out to cool completely and then package away in the fridge.  I use this meat the next day in a quinoa bowl or over a salad.  I simply pick the remaining meat fragments out with my fingers.  There is quite a bit of meat in the back.  This isn't glamorous, but it is the healthiest form of a cold cut that you'll get.*
