Chocolate Cake

Let them eat cake!!!  This goes perfectly with a mug of decaf coffee and some HGTV.

Mug Cake

Ingredients:

2 tbsp coconut flour
1 tbsp+ swerve
1/4 tsp baking powder
dash of salt
2 tbsp + 1tsp coconut oil
1 egg
1/4 cup almond milk (I prefer Califia Farms)
1/2 tsp vanilla
1 tbsp cocoa powder

Procedure:

Put all ingredients into mug. Roughly mix.  Microwave 30 seconds.  Mix until smooth.  Taste!  If this isn't sweet enough add swerve until you find your perfect level of sweetness.  For a cake with a gooey center microwave 1 minute and let sit in the microwave for 1 minute.  For a dryer cake microwave 1:30 and let sit in the microwave for 2 minutes.  Enjoy!

Cupcakes

Ingredients:


12 tbsp coconut flour
6 tbsp swerve
1.5 tsp baking powder
3/4 tsp salt
9 tbsp coconut oil
6 eggs (I use 3 flaxseed eggs and 3 regular eggs)
1.5 cups almond milk
6 tbsp cocoa powder
1.5 tsp vanilla


Procedure:

Combine all ingredients and roughly mix. Microwave 1 minute and mix thoroughly. Pour into greased cupcake molds.  Fill mold completely as these will deflate a bit. Bake at 350 for 15-20 minutes. When an inserted toothpick or fork comes out clean they are done! I enjoy these by themselves, but if you wish to use a frosting I prefer a simple topping of whipped cream.

  1. So excited that I can eat chocolate cake again! I have it in the oven. I had to substitute almond flour because Publix was out of coconut flour; also had to use small baking dish to make a cake instead of muffins because I do not have muffin pans. Will let you know how it turns out!
